Quindim (Egg and coconut pudding)

"Quindim" is a typical Brazilian sweet. It's very yellow due to the eggs used in the recipe. 

PORTUGUESE ENGLISH
Ingredientes: Ingredients:
1 xícara de água 1 cup of water
2 ½ xícaras de açúcar 2 ½ cups of sugar
2 colheres de manteiga 2 tablespoons of butter
100 gr de coco fresco ralado 100 g of grated fresh coconut
9 gemas 9 egg yolks
3 ovos 3 eggs
Modo de fazer: Preparation:
1. Bata todos os ingredientes no liquidificador. 1. Blend all the ingredients.
2. Coloque a mistura em forminhas untadas com manteiga e polvilhadas com açúcar. 2. Put the mixture in small molds (previously greased with butter and dusted with sugar).
3. Asse o quindim em banho-maria (160-180°C) por 30 minutos ou até o pudim ficar firme e amarelinho. 3. Bake the pudding in a water bath (330-350F) for 30 minutes or until the pudding is firm and very yellow.
4. Deixe esfriar e desenforme o quindim. 4. Allow it to cool down and remove the pudding from the mold. 
5. Coloque o quindim em forminhas de papel.  5. Put the pudding in paper cups.

Remarks:

  • You can coconut flakes instead of fresh grated coconut.

  • You can check if the pudding is done with a toothpick.

  • The toothpick comes out clean when the pudding is done. 

  • You can use a medium size mold instead of small molds.
