Canja de galinha (Chicken soup)

 

"Canja de galinha" is a typical Brazilian soup. It gives you strength when you have a cold or when you are recovering from a cold.

Ingredientes: Ingredients:
1 peito de frango cortado em pedaços 1 chicken breast cut into pieces
1 colher de sopa de óleo 1 tablespoon of oil
1 cebola pequena picada 1 small chopped onion
1 dente de alho amassado 1 clove of crushed garlic
2 batatas picadas em cubos 2 potatoes cut into cubes
1 cenoura picada picada em cubos 1 carrot cut into cubes
1 tomate picado (sem pele/semente) 1 chopped tomato (peeled/seedless)
½ xícara de arroz ½ cup of rice
salsinha e cebolinha picada chopped parsley and spring onion
2 litros de água fervente 2 liters of boiling water
sal e pimenta-do-reino a gosto salt and black pepper to taste
Modo de fazer: Preparation:
1. Lave o frango e seque-o com uma toalha de papel. 1. Wash the chicken and dry it with a paper towel.
2. Esquente uma colher de óleo numa panela. 2. Heat a tablespoon of oil in a saucepan.
3. Adicione a cebola, o alho, o frango e refogue até dourar. 3. Add the onion, the garlic, the chicken and stir-fry until golden brown.
4. Adicione a batata, a cenoura, o tomate, a salsinha, a cebolinha, o arroz e mexa bem. 4. Add the potato, the carrot, the tomato, the parsley, the spring onion, the rice and mix well.
5. Adicione a água, o sal, a pimenta e deixe cozinhar em fogo médio por 30-40 minutos ou até o frango e o arroz ficarem macios. 5. Add the water, the salt, the pepper and let it cook under medium heat for 30-40 minutes or until the chicken and the rice are tender.
6. Coloque a sopa numa tigela e sirva. 6. Put the soup in a bowl and serve it.

Remarks:

  • This recipe is for 3-4 servings.

  • Instead of chicken breast, you can use any chicken part that you want.

  • Three pieces of chicken parts are enough for this recipe.

  • In some supermarkets, you can find chicken bones for soup.

  • To remove the skin of the tomato, make a cross with a sharp knife at the bottom of the tomato and put the tomato in boiling water for some seconds. The skin will begin to split around the cross and it can be easily removed.

  • The above-pictured soup was made with chicken bones and I did not add tomato and carrots to the soup, but carrot and tomato add more flavor to the soup.
