Arroz à grega (Greek style rice)

Greek style rice is rice cooked with vegetables. It's colourful and usually served at special occasions.

Ingredientes: Ingredients:
2-3 colheres de sopa de óleo 2-3 tablespoons of oil
1 cebola picada 1 chopped onion
1 dente de alho amassado 1 clove of crushed garlic
1 cenoura picada 1 chopped carrot
1 pimentão picado 1 chopped pepper
1 xícara de ervilha congelada 1 cup of frozen green peas
1 xícara de passas 1 cup of raisins
2 xícaras de arroz 2 cups of rice
3 1/2 xícara de água quente 3 1/2 cup of boiling water
sal a gosto salt to taste
Modo de fazer: Preparation:
1. Frite a cebola e o alho em óleo quente. 1. Sauté the onion and the garlic in hot oil.
2. Adicione a cenoura, o pimentão, a ervilha e mexa bem.  2. Add the carrot, the pepper, the green peas and stir-fry well.
2. Adicione o arroz, as passas e mexa bem. 2. Add the rice, the raisins and stir-fry well.
3. Adicione a água, o sal e mexa bem.   3. Add the water, the salt and mix well.
4. Deixe a água ferver por alguns minutos. 4. Let the water boil for some minutes.
5. Quando a água estiver secando, tampe a panela e abaixe o fogo. 5. When the water level drops, cover the pan and lower the heat.
6. Quando o arroz estiver cozido, apague o fogo e deixe o arroz descansar uns 10 minutos. 6. When the rice is cooked, turn off the heat and let the rice rest for about 10 minutes.
7. Coloque o arroz numa tigela e sirva. 7. Put the rice in a bowl and serve it.

Remarks:

  • Brazilians rinse and drain the rice thoroughly before cooking it.

  • For every cup of rice, use 1-1/2 to 2 cups of water. More water gives you softer rice while less water gives you firmer rice.

  • Instead of water, you can use home-made chicken broth.
  • Instead of salt, you can use a chicken bouillon cube. I don't use chicken bouillon cubes because most of them contain MSG (Mono Sodium Glutamate).
  • If you like sweet corn, you also can add a cup of canned sweet corn to the rice. Corn makes the Greek style rice more colorful. 
  • To add color to the rice, you can use a cup of pepper in different colors (green, yellow, orange and red) instead of just one color.
  • There are two ways to prepare the Greek style rice. You can either cook all the vegetables with the rice or you can cook plain rice as usual and add the sautéed vegetables to the plain rice later by mixing all ingredients well.
